Datastores lose data in ways that are hard to reproduce: a player rejoins on a second server before the first has saved, two servers write the same key, an autosave collides with a leave. ProfileService solves this with session locking, so exactly one server owns a player profile at a time.
It also handles data not loading yet, graceful shutdown saves, and a reconciliation step when you add new fields to an existing save.
If you are storing anything a player would be upset to lose, do not write this yourself.
